Avocado & Roast Garlic Dip

Serves 10

Ingredients:

1 whole head of garlic
1 1/2 avocados
2 teaspoons lemon juice
1 clove garlic, crushed & roasted
1 tablespoon fresh parsley, chopped finely
1/2 teaspoon dried oregano, crushed finely
salt and pepper to taste


Cooking Instructions:

1. Heat oven to very hot (240° - 250°)
2. Cut the top off the garlic head and brushed cut surfaces with oil. Place in a baking tray and roast for about 20 mins until the garlic is soft enough to squeeze from its skin.
3. In a bowl, roughly mash the avocado and fold in the roasted garlic, juice, fresh garlic, herbs and season to taste.


Serve at room temperature.
